ROOVITI SOOPA (Chick Pea Soup)

If you like chick peas this soup is a must, because as you bite into the peas you get a lovely crunchy texture to a buttery flavour. Along with the juice it's just so delicious and very simple to make.

Serves 4 to 6

• 500g of dried chick peas
• 1 1/2 litres of water
• 1 vegetable or chicken    stock cube
• 1 teaspoon of salt
• 2 medium onions, sliced
• 4 tablespoons of extra    virgin olive oil
• 500g of fresh tomatoes,    peeled and chopped or    400g tin of tomatoes,    chopped.

Cook the chick peas as directed on the packet. Drain then add the water, stock cube and salt, bring back to the boil then simmer.
In another saucepan fry the onions in the olive oil until soft, add the tomatoes and cook for 3 minutes then pour the sauce into the chick peas and stir. Simmer for a further 15 minutes then serve.
